Spinach Lasagna

Here's a great Winter dish that won't break a New Year's Resolution... Spinach Lasagna.

16 Ounce low fat cottage cheese

1 bag fresh spinach

1 egg

1 tsp. crushed red pepper

Black pepper to taste

8 Ounce whole wheat lasagna noodles

1 cup Marinara sauce (store bought just fine)

1/2 cup Mozzarella cheese

Preheat oven to 350. In a large bowl, combine spinach, cheese, egg and peppers. It looks like a lot but the spinach really cooks down. Spray baking dish with Olive oil or cooking spray. Bring water in a separate pot to boil and slightly cook lasagna noodles 3 to 4 minutes. Arrange first layer of noodles and top with half of the  spinach-cheese mixture. Add another layer of noodles and top with remaining spinach-cheese mixture. Add last layer of noodles and pour Marinara sauce on top. Bake at 350 for 40 minutes. If fat and calories aren't a big concern you can replace the Marinara with Alfredo sauce for a completely different taste.
