Amazing Cookies - No Baking - Ultra Healthy!

No Bake Chocolate Chia Peanut Butter Cookies

Ingredients:

1 cup of nut butter (could be peanut or almond)

2/3 cup raw honey (could be less depending on your tastes)

1/3 cup coconut oil (melted)

1 tablespoon vanilla

1/4 cup chia seeds (these are known to rev up your metabolism!)

1/4 cup raw cacao powder (or cocoa, or carob)

1/4 teaspoon salt

1 1/2 3 cups oatmeal (If you use the amount of honey stated above, you may want to up the amount of oatmeal)

Mix all the wet ingredients together into a bowl. Then add the dry ingredient and mix evenly. Chill the dough in the fridge for about an hour, then take out and either roll into balls, or place in an 88 pan to slice and serve as bars. YUM!
